Potatoes: The potato should be suitable to be processed into French fries，such as shepody. Dry matter content: >20%
Sugar content: less than 0.25%
Potato temperature: 12℃
Potato size: long oval shape and at least diameter of 50mm and length can be longer than 80mm. 80- 100mm maximum diameter
Content of finished products: 64% moisture, 31% dry matter, 5% fat. Cutting size: standard 7*7and 9*9mm......
Potato Length requirements: Minimum length is 50mm
