French Fries Processing Plant Commissioning Guide

15 Sep, 2026

When building a French fries processing plant, the completion of equipment installation is just the beginning. Before actual production can begin, equipment inspections, raw material preparation, process parameter setup, and integrated line commissioning must be completed. For a continuous frozen French fries production line, the washing, peeling, cutting, blanching, dehydrating, frying, quick-freezing, and packaging equipment must operate in seamless coordination. The more thorough the preparations before production begins, the easier it will be to achieve the expected production capacity and product specifications during subsequent operations.

Check Whether French Fries Processing Equipment Is Properly Installed

Confirm the Operating Status of Major Equipment

Before production begins, each piece of equipment—including the potato washer, peeler, cutter, blancher, dehydrator, continuous fryer, quick-freezer, and packaging equipment—should be inspected individually. Focus on verifying that the motors, conveyor systems, heating systems, temperature controls, and electrical controls are functioning normally, while also checking the conveyor heights and material flow directions between equipment.

A French fries processing plant typically requires multiple consecutive processes to work in coordination. LONKIA's French fries processing machines integrate washing, peeling, cutting, blanching, frying, quick-freezing, and packaging, and can be configured according to product specifications and production requirements.

Conduct a No-Load Test First

Before introducing potatoes into the system, it is recommended to perform a no-load test of the entire line to observe whether the conveyor belts, chains, rollers, pumps, and drive components are operating stably. If any unusual noises, misalignment, or irregular material flow are detected, these issues should be resolved before proceeding to the production trial run.

Prepare Potatoes That Meet Specifications

For production commissioning, it is best to use potatoes that closely resemble those used in actual production rather than testing with only a small amount of raw material. The size, shape, maturity, dry matter content, and reducing sugar levels of the potatoes all affect the results of peeling, cutting, blanching, and frying.

Particularly during the cutting stage, the length and cross-sectional dimensions of the fries should be determined in advance, as cutter specifications directly influence subsequent blanching, dehydration, frying, and quick-freezing parameters.

Determine Key Processing Parameters

The focus of commissioning with actual raw materials is to determine operating parameters suitable for the specific raw materials and product specifications. The blanching machine requires adjustment of processing conditions based on the French fry specifications; the dehydration equipment must control surface moisture before the fries enter the fryer; and the continuous fryer requires adjustment of oil temperature, conveyor speed, and frying time according to product requirements.

After frying, the French fries must undergo a quick-freezing process. The LONKIA French fries processing plant uses IQF  technology; the freezing time shown on this page is approximately 3–5 minutes, but actual conditions require adjustment based on the thickness of the fries and the feed rate.

Verify that the Production Line's Capacity is Properly Matched

During commissioning, do not limit testing to the theoretical capacity of a single machine; instead, observe the actual material flow rate of the entire French fries processing plant. If the cutter feeds material too quickly while the blanching or frying equipment lacks sufficient processing capacity, material backlogs may occur; conversely, if the quick-freezing or packaging stages cannot keep up, it will also affect the continuous operation of upstream equipment.

Therefore, it is recommended to begin testing with a lower feed rate and gradually increase the production speed while recording the actual processing capacity and product condition at each stage.

Finalize Official Parameters After Trial Production

The fact that the French fries processing machine is operational does not mean commissioning is complete. After trial production, inspect the consistency of the French fries' size, color, oil content, freezing quality, and package weight, and adjust the relevant equipment parameters based on the results.

For companies currently constructing a French fries processing plant, determining raw material specifications, product dimensions, target production capacity, and packaging requirements in advance allows equipment manufacturers to more accurately tailor the production line configuration. LONKIA can provide corresponding turnkey solutions and technical support based on the customer's production efficiency, product specifications, and process requirements.

Pre-Production Checklist

Before commencing formal production, it is recommended to verify at least the following:

  • Production equipment has been fully installed and undergone no-load testing;
  • The potato raw materials meet production requirements;
  • The cutting specifications and cutting tools have been finalized;
  • Preliminary testing of blanching, dehydration, frying, and quick-freezing parameters has been completed;
  • The conveying capacities of the various pieces of equipment are generally matched;
  • Operators are familiar with equipment startup, shutdown, and parameter adjustments;
  • Proceed to continuous production only after trial production products meet the specified standards.

Summary

The goal of commissioning a frozen French fries production line is not merely to ensure the equipment operates normally, but to establish a stable production state where raw materials, equipment, process parameters, and product quality are all in harmony. Completing these preparations in advance can reduce the need for repeated adjustments after official production begins and help the French fries processing plant reach a stable production phase more quickly.
